Over the years I have been working on what I think is the best fried chicken recipe ever. And I guarantee that once you try this delicious fried chicken, you’ll agree that it just might be the most delicious fried chicken in the world.
When I make this fried chicken for family and guests, I buy one or two chickens that are already cut up and start with that. You want to wash the chicken pieces and remove any excess fat or skin.
When I’m making fried chicken like my Grandma Hattie taught me to do, I leave the skin on my chicken. If you follow the recipe, I promise you’ll end up with fried chicken that will leave you wanting more.
In a bowl you want to mix two cups of buttermilk and two large eggs and this is what you will use to dip the chicken.
In another bowl that you want to put.
1. Two cups of plain all-purpose flour.
2. An envelope of dry Italian seasoning.
3. A tablespoon of salt to season.
4. A teaspoon of dried parsley powder.
5. A teaspoon of Hungarian paprika.
Wash the chicken pieces well under cold running water, then pat dry with paper towels.
You need a large, deep electric skillet with a lid. You want to add about two inches of vegetable oil into the skillet, and you want to turn your electric skillet on to medium heat. Don’t turn it up too high or you will burn your oil and your chicken.
What you want to do is cook the chicken slowly in the oil with the lid on the pan and you don’t want to flip the chicken too often or remove the lid from the pan too often. Slow cooking the chicken with the lid on in the pan is the secret to making delicious fried chicken that will turn heads.
Dip the chicken pieces first in the buttermilk-egg mixture and then dip them in the flour mixture making sure to coat the chicken pieces very well.
Place your chicken pieces in the electric skillet and you want it already hot when you place your chicken pieces. Once you have all the chicken pieces in the pan, turn the pans over medium heat and place the lid on the pan. You want your chicken to brown on that side before you flip it.
Cooking the chicken over medium heat and not flipping it too often is the secret to making delicious fried chicken that will turn out so wonderful. Your thicker chicken pieces need to have an internal temperature. 160 degrees.
Just be sure not to flip the chicken too often, and drain the cooked chicken on paper towels.
